Flaked Tuna Niçoise Salad

Ingredients

50g Good Catch tuna flakes
10g Potato
10g Haricot bean
10g Shred OnlyEG
10g Pimento
10g Italian parsley
10g Pickled onion
10g Kalamata olive
15g Sundried tomato
10g Roasted yellow cherry tomato
10g Roasted red cherry tomato
10g Olive oil caviar
30g Baby romaine lettuce
5g Chopped chive
5g Chopped shallot
5ml Lemon juice
1 pc Lemon zest
15g Sundried tomato tapenade

Instructions

Preparation for Tuna Salad

  1. Chop the onion, pimento, Italian parsley, and sundried tomato.
  2. Mix with Good Catch Tuna Flakes.
  3. Toss with olive oil, lemon juice, lemon zest, and tapenade.
  4. Add salt and pepper.

Preparation for Pimento Puree

  1. Blend the pimento.
  2. Add salt and pepper.

Preparation for Potato

  1. Wash the potato.
  2. Steam the whole potato.
  3. Use the Parisienne scoop to scoop the potato.
  4. Toss with olive oil.
  5. Roast at 186°C for 8 minutes.

Preparation for Roasted Cherry Tomato Red & Yellow

  1. Preheat the oven at 200°C.
  2. Toss the cherry tomato with olive oil.
  3. Place the cherry tomato in the tray.
  4. Sprinkle sea salt and pepper.
  5. Roast for 5 minutes.

Preparation for Haricot Bean

  1. Boil the water.
  2. Add olive oil, sea salt and sugar.
  3. Once the water is boiling, add the haricot bean.
